There’s a couple of Star Wars documentaries available at the moment – Empire Of Dreams: The Story Of The Star Wars Trilogy (Extended Version) – a 2004 show all about the making of the original Skywalker trilogy.
There’s also a documentary called Disney Gallery: The Mandalorian. This features series creator Jon Favreau giving a behind-the-scenes look at the making of the show, with interviews with the cast and crew and never-before-scene footage from the production process.
